When using the sunday start on birth control pills, do you have to use a back up(condoms,etc.) for the first seven days every month/pack? Or is it just for the first pack?

If you are just starting to take birth control pills then you need to use a condom or another effective method of birth control for the first seven days (or as your doctor advised.) The extra form of birth control is only for the first month. After you have taken your first full packet of birth control pills you should be protected as long as you take the pills everyday and at or around the same time everyday.
